Ingredients

For the Dumplings

  • 2 tbsp olive oil
  • 9 oz shiitake mushrooms, minced (if dried, soak 30 min first)
  • 3 garlic cloves, minced
  • 1¼ lb ground beef
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • ¾ tsp freshly ground black pepper
  • 4 green scallions, chopped
  • 1 large package wonton wrappers (square or circular)

For the Broth

  • 2 tbsp olive oil
  • 2 shallots, sliced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups vegetable broth
  • ¼ cup soy sauce
  • ¼ tsp red pepper flakes (optional)

For the Dipping Sauce

  • 3 green scallions
