How to Rehydrate Dried Shiitake

Keep the mushrooms submerged while soaking. Once rehydrated, gently squeeze out the excess water and trim away any stems that remain tough. The softened caps can then be sliced, chopped, or cooked whole.
Save the Soaking Liquid
Do not overlook the soaking water. Dried shiitake release an incredible amount of savory flavor as they rehydrate, creating a simple mushroom stock that can be added to soups, sauces, grains, and braising liquids.
Strain the liquid through a fine-mesh strainer or coffee filter before using it to remove any natural sediment.
